Emily is the child with multiple birthday parties! :) Yesterday she stayed home from school…her birthday request was to spend the day with her Mom. (We do not get enough time together.)
It was a crazy day! We made some Halloween decorations that we put outside that I did not take a photo of. She decorated inside, we cleaned the best we could, picked up Elijah and then Lucas, frantically grocery shopped, I dropped everyone at home, went back to town to a two-hour IEP meeting for Elijah, raced home and got dinner on the table for 12 of us. What a whirlwind of a day.
(Yes, my photos are not award winning. I’m using a crappy camera, my good one needs cleaned and I am too
lazy busy to drop it off to be done and I don’t really feel like taking pictures anyhow).
I made enchiladas and tacos. We did a buffet style. Cupcakes for dessert.

I totally forgot to take photos until the very end so dinner was already gone. Here is a shot of the enchilada filling that was extra. Only the second time I’ve made them and first time with this recipe. Everyone said they were good so that was a relief!
I’m taking the day off from all the school/legal stuff (unless I’m forced to deal with it) and going to work on cleaning the house. Unbelievable the disaster I constantly have. As construction gets done it will get better, but in the meantime….ug!!
No accumulated snow yet. Read an article in the paper that said we are in for a cold winter (25* this morning) with little snow. Never good for the sewer systems! I think we are supposed to have 1.5” by now and have none. That’s okay….I still have a few things laying in the yard. How’s the weather in your world?
