Pickles and Relish

Obviously cucumbers were not being picked while I was gone and something needed to be done. I’ve already realized that I’ve grown too many slicing cucumbers and not enough pickling cucumbers, but I didn’t know the difference at the time. I decided to just pickle them all rather than waste them. I read that they’ll be a bit mushy, but my husband is pretty cool about not being picky.

Olivia really gets into the whole gardening thing and has been by my side helping every step of the way.

We had a few picking cucumbers that were made into Bread and Butter Pickles. The others we made into dill pickles.

We finished with eight 3/4 pints of the Bread and Butter and six pints of dill. We also blanched and packaged the Swiss Chard leaves for pizza topping later this winter.

We finished with ten 1/2 pints of Rainbow Swiss Chard Relish.

Today we are going to cut up the big cucumbers for more Bread and Butter chunks. Hopefully they won’t be too soft. We are itching to get out and pick Highbush Cranberries, but the rain won’t stop. Maybe tomorrow?

Time to jump in the shower and head out to a meeting regarding the future of my son’s education. Oh, how I’d just love to spend a whole day at home.

You were so productive today! Everything looks great. We have used our regular cucumbers for pickles before and they were fine. Olivia is some helper...she sure is growing up.

I don't know how there are enough hours in the day for everything you do. I am constantly amazed by what you accomplish in a days time.

I made strawberry jelly the other week and thought I was the bomb, but you, you put away a pantry worth of items in an afternoon.

So I quit.
I quit trying to be the perfect wife and mom, because you me beat by a looooooooooooooooong country mile.

Olivia is adorable! I've never had chard. What does it taste like? I have to get going on my hot pepper jelly and peach/mango jelly soon. Maybe we should arrange an exchange!
