Oatmeal Raisin Cookies

Sandy is having a cookbook giveaway, and I entered with a favorite recipe for Oatmeal Raisin Cookies I used to bake for my Daddy. They are sooo moist as they are made by boiling the raisins and adding the juice. I promise they are the best you'll ever eat!

Ingredients:

1 cup shortening
1 cup sugar
2 eggs
2 cups flour
1/2 tsp. soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
6 tbl. raisin juice
2 cup quick rolled oats
1 cup cooked raisins
1 cup chopped walnuts

Preheat oven to 375. Cream shortening and sugar. Add eggs. Mix.
Boil raisins. Sift dry ingredients.
Alternate adding dry ingredients and juice with dry first and last.
Blend in the oats, raisins and nuts.
Drop spoonfuls on a greased cookie sheet for 8 minutes. Makes 6 dozen.

The best you'll ever eat! :)

Thanks so much for the mention. Oatmeal raisin is my favorite. Dang diet, uuugggg! I could eat about a dozen right now. I think if I close my eyes I can smell them.
