This post is for my friend Patty who knows how much I hate to cook....last night I soaked some beans and today I cooked them up.
Then I sauteed some onions in olive oil.
Mashed the beans....
and mixed it together.
Added some salt (hubby doesn't like as much salt as I do so that is always added after the fact) and topped it with cheese.
Guess what? It's really good. I realize I could have opened a can of refried beans, popped them in the microwave and been done with it, but these are much better. Maybe this cooking thing isn't so bad after all. :)
I cook all the time but never my own refried beans. I go for the can. But.... I may just have to try this... plus mash in some green chilies too! If you like spicy, give that a try next time.... But you may have to drive back and forth to town for more beans!!
They're so much better when you start with real beans (who knows what's in that refried can :P ) -- next time add a side of biscuits or corn bread and I'll beat my way to your door . . . now that you've shoveled, lol.
